Recipe in English:

Ingredients:
-Dahi (Yogurt) 1 & Cup
-Hari mirch (Green chilli) paste 1 tbs
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Lal mirch powder (Red chilli powder) tbs or to taste
-Zeera powder (Cumin powder) 1 tsp
-Haldi powder (Turmeric powder) tsp
-Dhania powder (Coriander powder) 1 tsp
-Namak (Salt) 1 tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Biryani masala 1 & tbs
-Garam masala powder tsp
-Olpers Tarrka Desi Ghee Cup
-Kishmish (Raisins) 2 tbs
-Kaju (Cashew nuts) 12-15
-Pyaz (Onion) sliced 2 medium
-Laung (Cloves) 2
-Hari elaichi (Green cardamom) 2
-Badiyan ka phool (Star anise) 1
-Darchini (Cinnamon sticks) 2
-Zeera (Cumin seeds) 1 tsp
-Gajar (Carrot) Cup
-Matar (Peas) Cup
-Phool gobhi (Cauliflower) 1 Cup
-Aloo (Potatoes) cubes 2 large
-Phaliyan (French beans) 1 Cup
-Podina (Mint leaves) chopped 1-2 tbs
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Chawal (Rice) Sella 500g (boiled with salt & whole spices until 3/4th done)
-Hara dhania (Fresh coriander) chopped 1 tbs
-Podina (Mint leaves) chopped 1 tbs
-Elaichi powder (Cardamom powder) tsp
-Kewra essence few drops
-Hari mirch (Green chillies) 2-3
-Zarda ka rang (Orange food color) tsp or as required
-Olpers Tarrka Desi ghee 1-2 tbs

Directions:
-In a bowl,add yogurt,green chilli paste,ginger garlic paste,red chilli powder,cumin powder,turmeric powder,coriander powder,salt,Kashmiri red chilli powder,biryani masala,garam masala powder,whisk well & set aside.
-In a pot,add desi ghee & let it melt.
-Add raisins,cashew nuts & fry on medium flame for 1-2 minutes & set aside.
-In the same pot,add onion & fry until light golden & reserve half quantity for layering.
-In remaining fried onion,add cloves,green cardamom,star anise,cinnamon sticks,cumin seeds & mix well.
-Add carrot,peas,cauliflower,potatoes,french beans,mix well & cook on medium flame for 3-4 minutes.
-Add spiced yogurt,mix well & bring it to boil,cover & cook on medium flame for 6-8 minutes then cook on high flame until oil separates.
-Add mint leaves,fresh coriander,boiled rice & spread evenly.
-Add fresh coriander,mint leaves,cardamom powder,fried raisins & cashew nuts,reserved fried onion, kewra essence,green chillies,orange food color,desi ghee,cover with kitchen towel and lid & steam cook on low flame for 12-15 minutes.
-Garnish with fried onion & serve with raita!

Directions:
-Bowl mein dahi,hari mirch paste,adrak lehsan paste,lal mirch powder,zeera powder,haldi powder, dhania powder,namak,Kashmiri lal mirch powder,biryani masala aur garam masala powder dal ker ache tarhan whisk krer lein & side per rakh dein.
-Pot mein desi ghee dal ker melt karein.
-Kishmish aur kaju dal dein aur darmiyani ancch per 1-2 minutes kliya fry ker lein & side per rakh dein.
-Us he pot mein pyaz dal dein aur light golden ho janay tak fry ker lein & half quantity ko layering kliya reserve ker lein.
-Remaining fried yaz mein laung,hari elaichi,badiyan ka phool,darchini, aur zeera dal ker ache tarhan mix karein.
-Gajar,matar,phool gobhi,aloo aur phaliyan dal ker ache tarhan mix karein aur darmiyani ancch per 3-4 minutes kliya paka lein.
-Spiced yogurt dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur darmiyani ancch per 6-8 minutes kliya paka lein phir tez ancch per oil alag ho janay tak paka lein.
-Podina,hara dhania aur boiled chawal dal ker pheela lein.
-Hara dhania,podina,elaichi powder,fried kishmish & kaju,reserved fried pyaz,kewra essence,hari mirchein,zarda ka rang aur desi ghee dal dein,kitchen towel & lid sa cover karein aur halki ancch per 12-15 minutes kliya steam cook ker lein.
-Fried pyaz sa garnish ker lein aur raita ka saath serve karein!
