Masale Bhaat Maharashtrian Recipe Family Food Tales Sanjeev Kapoor Khazana

MASALE BHAAT

Ingredients

1 cups ambe moher rice, soaked for 20 minutes, and drained
2-3 tbsps ghee
1 tsp mustard seeds
1 tbsp finely chopped garlic
1 small onion, finely chopped
A pinch of asafoetida (hing)
1 medium potato, cut into 1 inch pieces
cup green peas, shelled
150 grams ivy gourds (tendli), vertically cut into quarters
3-4 small brinjals, cut into quartered
2 tbsps goda masala
tsp turmeric powder
Salt to taste
1 tbsp chopped jaggery
2 green chillies, slit + for garnish
10-15 cashew nuts, soaked
Scraped fresh coconut for garnish
Chopped fresh coriander leaves for garnish
Roasted chopped cashew nuts for garnish

Method

1. Heat ghee in a non-stick deep pan. Add mustard seeds and let them splutter. Add garlic and saut till golden.
2. Add onion and asafoetida and mix well. Cook till translucent. Add potato, mix, cover and cook for 1-2 minutes.
3. Add green peas, ivy gourds, brinjals, goda masala, and mix well. Cover and cook for 1 minute.
4. Add rice and saut for 1-2 minutes. Add turmeric powder and mix well. Cover and cook for 1 minute.
5. Add 3 cups water, salt, jaggery, green chillies, and mix well. Cover and cook on medium heat for 10-12 minutes.
6. Add cashew nuts, cup water, mix, cover and cook on medium heat for 8-10 minutes. Switch the heat off and allow to rest for 10-15 minutes.
7. Transfer in a serving plate, garnish with coconut, coriander, roasted cashew nuts, and green chilli. Serve hot.
