In MUTTON HALEEM : Boil mutton in mineral water along with green chilies for 5 hours.Add a mixture of ginger-garlic paste, coriander, and soaked basmati rice. Cook for 15 - 20 minutes. Mix coarse wheat flour with water and pound for about 30 minutes. Add masala to the semi-cooked flour including black peppercorn, khwab chini, cinnamon, cardamom, 2 types of cumin, rose petals, almonds, cloves, big crystal salt and oil. Close and cook. Reduce the fire and leave it to cook for 2 hours. Pound the mixture for 25 minutes and add a paste made of 3 types of lentils, and ghee and pound it more for 5 minutes. Ready to serve.
