Chawal Chole

Ingredients for Chole:
Oil 1/2 cup
Onion (chopped) 1 cup
Ginger garlic paste 1 tbsp
Tomatoes chopped 1/2 cup
Red chili powder 1 tbsp
Salt 1 tsp / to taste
Turmeric powder 1 tsp
Black pepper powder 2 tsp
Cumin powder 1 tbsp
Coriander powder 1 tbsp
Water 1/4 cup + 2 cups
White chickpeas boiled 1/2 kg
Yogurt 1 cup
Garam masala powder 1/2 tsp

Ingredients for Rice:
Water as required
Soaked rice 2 cups
Salt 1 tsp

Ingredients for Green Chutney:
Green coriander 1 cup
Mint leaves 1/4 cup
Green chilies (chopped) 2-3
Onion cubes 1/4 cup
Lemon juice 1 tbsp
Vinegar 2 tbsp
Salt 1/4 tsp / to taste
Black pepper powder 1/4 tsp
Water as required

Ingredients for Assembling:
Clay pot
Prepared rice
Prepared chole
Prepared green chutney
Onion rings for garnishing
Green coriander for garnishing


Directions for Chole Preparation:
1. In a pot heat oil and add onion, ginger garlic paste and cook until translucent.
2. Now add tomatoes, red chili powder, salt, turmeric powder, black pepper powder, cumin powder, coriander powder and cook for a minute.
3. Add 1/4 cup water and cook for another minute.
4. Add white chickpeas and mix well.
5. Add water and cover and cook for 10-15 minutes.
6. Add yogurt, garam masala powder and cook for 4-5 minutes. Your chole are ready.
Directions for Rice Preparation:
7. In a pot heat water and bring it to a boil.
8. Add rice, salt and boil until 80-85% done. Strain and set aside. Your boiled rice is ready.
Directions for Green Chutney Preparation:
9. In a glass jar add green coriander, mint leaves, onion cubes, lemon juice, vinegar, salt, black pepper powder, water and blend well into smooth paste. Your green chutney is ready.
Directions for Assembling:
10. In a clay pot add boiled rice, chole, green chutney and garnish it with onion rings and coriander. Your chawal chole are ready to be served.
Preparation time: 10-15 mins
Cooking time: 30-45 mins
