This Matka Chicken is just the right recipe for the hard-core chicken lovers.

MATKA CHICKEN

Ingredients

750 grams chicken on the bone, cut into 2 inch pieces
½ lemon
½ cup yogurt
2 tbsps Tata Sampann Chicken Masala
Salt to taste
2 tsps red chilli powder
½ tbsp ginger-garlic paste
2 tsps red chilli paste
¼ cup browned onion
1½ tbsps + ½ tsp ghee
¾ cup fresh tomato puree
1½ tbsps almond paste
A few pieces of hot charcoal
3-4 cloves
Ready-made refined flour dough as required
1 inch ginger, cut into thin strips
Coriander sprig for garnish

Method

1. In a large bowl, add chicken, squeeze lemon, yogurt, Tata Sampann Chicken Masala, salt, and red chilli powder. Add ginger-garlic paste, red chilli paste, browned onions and mix well. Refrigerate for 1-2 hours.
2. Heat 1 ½ tbsps ghee in an earthen pot, add the marinated chicken pieces and sauté well on high heat for 3-4 minutes.
3. Add fresh tomato puree and mix well. Add almond paste and mix well. Adjust salt and mix well.
4. Take hot charcoal in a small earthen bowl, add cloves and add remaining ghee. Cover and let the flavour infuse for 1-2 minutes.
5. Discard the charcoal, cover with a lid and apply dough on the sides of the pot to seal. Cook till the chicken is cooked completely.
6. Cut the dough to open the lid, transfer into a serving bowl, garnish with ginger strips and coriander sprig. Serve hot.
