This Matka Chicken is just the right recipe for the hard-core chicken lovers.MATKA CHICKENIngredients750 grams chicken on the bone, cut into 2 inch pieces½ lemon½ cup yogurt2 tbsps Tata Sampann Chicken MasalaSalt to taste2 tsps red chilli powder½ tbsp ginger-garlic paste2 tsps red chilli paste¼ cup browned onion1½ tbsps + ½ tsp ghee ¾ cup fresh tomato puree1½ tbsps almond pasteA few pieces of hot charcoal3-4 clovesReady-made refined flour dough as required1 inch ginger, cut into thin stripsCoriander sprig for garnishMethod1. In a large bowl, add chicken, squeeze lemon, yogurt, Tata Sampann Chicken Masala, salt, and red chilli powder. Add ginger-garlic paste, red chilli paste, browned onions and mix well. Refrigerate for 1-2 hours.2. Heat 1 ½ tbsps ghee in an earthen pot, add the marinated chicken pieces and sauté well on high heat for 3-4 minutes. 3. Add fresh tomato puree and mix well. Add almond paste and mix well. Adjust salt and mix well.4. Take hot charcoal in a small earthen bowl, add cloves and add remaining ghee. Cover and let the flavour infuse for 1-2 minutes.5. Discard the charcoal, cover with a lid and apply dough on the sides of the pot to seal. Cook till the chicken is cooked completely.6. Cut the dough to open the lid, transfer into a serving bowl, garnish with ginger strips and coriander sprig.
