Matka Daal Chawal

Ingredients for Dal:
Oil 1/3 cup
Onion (chopped) 1 cup
Ginger garlic (chopped) 2 tbsp
Tomatoes (chopped) 1/2 cup
Red chili powder 2 tbsp
Coriander powder 1 tbsp
Turmeric powder 1/2 tsp
Salt 1 tbsp / to taste
Cumin powder 1 ½ tsp
Moong dal (yellow lentil soaked) 1 cup
Masoor dal (red lentil soaked) 1 cup
Water 1/4 cup + 5 cups
Garam masala powder 1 tbsp

Ingredients for Tarka:
Oil 1/3 cup
Garlic (chopped) 1 tbsp
Green chilies (chopped) 1 tbsp
Dried Red Button Chilies 7-8
Curry leaves 2
Cumin seeds 1 tbsp

Ingredients for Zeera rice:
Oil 1/2 cup
Cumin seeds 1 tbsp.
Salt 1 tbsp
Soaked rice 2 cups
Water 3 cups

Ingredients for Onion Salad:
Chilled water as required
Onion rings 1 cup
Red chili powder 1 tbsp
Chaat masala 1 tbsp
Salt 1/2 tsp / to taste
Lemon juice 1 tbsp

Directions for Daal Preparation:
1. In a pot heat oil and add onion, cook until translucent. Add ginger garlic and cook for a minute.
2. Now add tomatoes and cook until tomatoes get soft.
3. Add red chili powder, coriander powder, turmeric powder, cumin powder, salt and mix well. Cook for a minute. Add water and cook for 1-2 minutes.
4. Now add soaked lentils and mix well. add water and bring the daal to boil.
5. Cover and cook until daal is fully done. Set aside.
6. For tarka, heat oil in a pan and add garlic and green chilies, cook for a minute.
7. Add cumin seeds, red button chilies, curry leaves and cook for another minute. Your Tarka is ready.
8. Take off the lid of prepared daal, add garam masala powder and mix well.
9. Pour the prepared tarka over daal and mix well. Your Daal is ready. Set aside.
Directions for Zeera Rice Preparation:
10. In a pot heat oil and add cumin seeds, sizzle for a minute.
11. Add water and salt and bring it to boil.
12. Now add soaked rice and cook until 80% water has been absorbed.
13. Cover and steam over low flame for 10-15 minutes.
14. Your zeera rice is ready to serve. Set aside.
Directions for Onion Salad Preparation:
15. In a bowl add chilled water and onion rings, soak for 10-15 minutes.
16. Transfer the soaked onion rings in another bowl, add red chili powder, chaat masala, salt, lemon juice and mix well. your onion salad is ready.
17. Add the prepared daal and zeera rice in matka, top it with onion salad and pickle. Serve and enjoy.
