Matki Chi Usal - Maharashtrian Dish with grams ( moth bean usalMatki is one of my favorite beans. These lentils are high sources of proteins. Its usal can be enjoyed at any time of the day. A lightly flavored one for morning breakfast topped with grated coconut, for lunch, as an evening snack converted to a Sprouts Dahi Misal .IngredientsDirectionspinch asafoetida a2-3 tsp black masalato taste coconut and chopped coriander leaves,2 clove garlic crushed2 tsp jaggery or sugar500 grams matki1 tsp mustard seeds1 number onion2 tsp red chili powderto taste salt1 tsp turmeric powder1. Chop onions into small pieces.2. Heat some oil in a pan3. Add mustard seeds, asafoetida, turmeric powder and then onions and garlic.4. After onion pieces turn transperent, add matki and mix well. Add 1 cup water.5. Cover and cook over medium heat for 8-10 minutes till it is half cooked.6. Now add black masala, jaggery, chili powder and salt.
