Today, we will use anchovy-kelp broth to make a simple-and-light potato soup. I grew up eating this soup for breakfast, alongside pan-fried sole (flatfish) and leftover kimchi. A good example of Korean homecooking that is not found at Korean restaurants.

If you visit the Korean mart, ask for sole fish ( ga-ja-mi). The flatfish fillets will be sold frozen (and with bone-in). Simply de-thaw and pan-fry on a low heat. Overall, a healthy and well balanced meal.
