Medu Vada Recipe/Coconut Chutney Recipe/Homemade Batter | Indian Mom's Kitchen

Hot Medu Vada Sambar along with Coconut Chutney and a cup of piping hot Filter Coffee is something which we all relish. In this video, we have shown how you can easily make soft and crispy Medu Vada with Coconut Chutney at home. Given below is the Medu Vada recipe along with also the Coconut Chutney recipe.

Ingredients for Medu Vada:
200 gms Urad Dal
1 inch chopped Ginger
1 chopped Onion
3 chopped Green Chillies
Few Curry leaves
Salt to taste
Oil for deep frying

Method:
-- Soak the Urad Dal for 4-5 hours.
-- Grind the soaked Dal to a smooth paste using very little water.
-- Add Onions, Green Chillies, Ginger, Curry leaves and Salt to the ground Dal and combine well.
-- Heat Oil in a pan for deep frying.
-- Wet both hands so that the Batter will come off easily after shaping.
-- Take a small portion of the batter and shape it with a hole as shown.
-- Slide it into the hot Oil and fry on medium flame.
-- Fry till brown and crisp on the outside and soft inside.
-- Serve hot with Sambhar and Coconut Chutney.

Ingredients for Coconut Chutney:
1 cup grated Coconut
2 green Chillies
1/2 tsp Mustard Seeds
2 tbsp roasted Gram/Dalia
1/2 inch Ginger
2 dry Red Chillies
2 tbsp Coconut Oil
Few Curry leaves
Salt to taste

Method:
-- Grind together grated Coconut, Dalia, Green Chillies, Ginger, Salt and enough water to make a thick Chutney.
-- In a pan, heat Oil and splutter Mustard seeds, dry Red Chillies and Curry leaves.
-- Pour this tempering over the Chutney and mix well.
-- Coconut Chutney is ready to be served along with Medu Vada.
