Methi Bhaji | Cooksmart | Sanjeev Kapoor Khazana

Methi Bhaaji is an extremely nutritious and healthy sabzi which is made from a green, leafy vegetable.

METHI BHAJI

Ingredients

1 medium bunch fresh fenugreek sprouts
1 medium onion
1 green chilli
1 tbsp oil
A pinch of asafoetida (hing)
½ tsp mustard seeds
4-5 garlic cloves, crushed
Salt to taste
A pinch of turmeric powder
¼ tsp red chilli powder

Method

1. Wash the fenugreek sprouts well in plenty of water.
2. Finely chop onion and green chilli.
3. Heat oil in a non-tick pan, add asafoetida and mustard seeds and let the seeds splutter. Add onion and mix. Add garlic and saute.
4. Roughly chop the fenugreek sprouts and add to the pan. Add green chilli and salt and mix.
5. Add turmeric powder and red chilli powder and mix and cook for 2-3 minutes. Do not overcook the sprouts.
6. Transfer into a serving dish and serve hot with chawal ki bhakri.
