The combination of methi leaves and onions in this crispy pakodas is just divine!

METHI PYAZ KE PAKODE

Ingredients

1½ cups chopped fresh fenugreek leaves (methi)
2 medium onions (pyaz)
Salt to taste
½ tsp red chilli powder
½ tsp cumin powder
1 tsp coriander powder
¼ tsp turmeric powder
¼ tsp carom seeds (ajwain)
2 tsps rice flour
¾ cup gram flour (besan)
Oil for deep frying
Green chutney to serve

Method

1. Take fenugreek leaves in a large bowl. Add salt and mix well. Set aside for 10-15 minutes.
2. Finely chop the onions.
3. Squeeze the excess water from the fenugreek leaves through a muslin cloth. Discard the water and add the leaves into a large bowl. Add the onions, red chilli powder, cumin powder, coriander powder, turmeric powde, salt, carom seeds, rice flour and gram flour and mix well.
4. Heat sufficient oil in a kadai. Gently slide in small portions of the mixture and deep fry till golden brown and crisp. Drain on an absorbent paper.
5. Serve hot with green chutney.
