Easy, nutritious & quick to prepare!MILLET PULAOIngredients1 cup barnyard millet (samo)1 tbsp oil2½ tbsps ghee1 tsp cumin seeds6-7 black peppercorns4-5 cloves3-4 green cardamoms1 bay leaf1 inch cinnamon stick4-5 French beans, cut into ½ inch and blanched1 small carrot, cut into small dices and parboiled¾ cup cauliflower florets, parboiled2-3 slit green chillies7-8 curry leaves1 tbsp crushed ginger½ tsp Tata Sampann Turmeric PowderSalt to taste3 tbsps fresh coriander leaves, choppedFresh coriander sprig for garnishBoondi raita to serveMethod1. Heat oil and 1 tbsp ghee in a non-stick pan. Add cumin seeds, black peppercorns, cloves, green cardamoms, bay leaf and cinnamon stick and sauté till fragrant.2. Add French beans, carrots and cauliflower and sauté for 1-2 minutes. Add green chillies, curry leaves and ginger and sauté for 1-2 minutes.3. Add Tata Sampann Turmeric Powder, mix and cook for 1 minute.4. Add samo, mix and roast for 2-3 minutes. Add salt and 2½ cups water, cover and cook on high heat till most of the moisture evaporates. Reduce the heat to low and cook for 10-15 minutes more. Switch the heat off and allow the millet pulao to rest for 5-10 minutes.5. Add coriander leaves and remaining ghee and gently mix.6.
