Mini Carrot Cake Pancakes

These Mini Carrot Cake Pancakes are the perfect reason to start pancake mornings for your little one

INGREDIENTS
34 cup PURITY Jungle Oats Just Add Milk Instant Oats Baby Cereal Original
14 tsp ground cinnamon
1 tsp bicarbonate of soda
1 jar (125ml) PURITY Carrots
2 large eggs
14 cup plain yoghurt, plus extra for serving

SERVING SUGGESTION:
Fresh fruit

METHOD
1. In a large mixing bowl, add the PURITY Jungle Oats Just Add Milk Instant Oats Baby Cereal
Original, cinnamon and bicarbonate of soda and whisk until combined. Add the PURITY
Carrots, eggs and yoghurt and whisk until a thick batter has formed.
2. Heat a large non-stick frying pan on low heat and lightly grease with cooking spray.
3. Spoon 4 mini pancakes onto the pan, about 1 tablespoon of batter for each. Use the back
of a spoon to shape them into thin, flat disks, and cook for about 3 minutes. Flip the
pancakes and cook on the other side for another 3 minutes. Repeat this step until the batter
is finished; you should achieve 12 mini pancakes.
4. Serve with plain yoghurt, fresh fruit & ENJOY!
