Mini Pepperoni Pizza | Sanjeev Kapoor Khazana

Mini Pepperoni Pizza Puffs are cheesy pepperoni filled pizza bites that are cooked until golden and puffed in a mini muffin tin. 

MINI PEPPERONI PIZZA

Ingredients

Pepperonis as required
Pizza dough as required
Refined flour for dusting
Pizza sauce for spreading
1 medium onion, chopped
½ medium yellow bell pepper, cut into small cubes
½ medium green capsicum, cut into small cubes
½ medium red bell pepper, cut into small cubes
200 grams mozzarella cheese
Dried oregano for sprinkling
Crushed black peppercorns to taste
Salt to taste

Method

1. Preheat oven at 180º C.
2. Divide the dough into equal portions. Dust the worktop with some flour, transfer the dough and roll out to make a thin sheet using a rolling pin. Cut the sheet into roundels using a medium size cookie cutter.
3. Dust the baking tray with some flour and transfer roundels onto a baking tray.
4. Spread some pizza sauce on each roundel. Put some onion, yellow bell pepper, capsicum and red bell pepper on top. Grate some cheese on top, place some pepperonis and sprinkle some dried oregano, crushed peppercorns and salt. Grate some more cheese on top.
5. Place the baking tray in preheated oven and bake till the cheese turns golden.
6. Serve hot.
