A slightly different and an absolute mouth-melting recipe with lots of leafy vegetables that are loaded with delicious goodness.MIX MATH VADIIngredients½ medium bunch lal math½ medium bunch green math¾ cup gram flour (besan)Salt to taste¼ tsp red chilli powder¼ tsp turmeric powder¼ tsp cumin powder½ tsp coriander powder¼ cup rice flour1 tsp ginger-garlic-green chilli paste½ tsp oil + for deep fryingGreen chutney to serveMethod1. Shred lal math and green math and transfer them into a bowl. Add salt, red chilli powder, turmeric powder, cumin powder, coriander powder, gram flour, rice flour, ginger-garlic-green chilli paste and water and whisk to form a thick batter. 2. Grease a steamer plate with ½ tsp oil, pour the batter into it and tap gently for a few times to avoid air pockets. 3. Heat sufficient water in a steamer, place the steamer plate in it, cover and steam for 10-15 minutes.4. Remove the steamer plate out, allow the steamed mixture to cool slightly, slide a knife on the edges, de-mould and cut into squares.5. Heat sufficient oil in a kadai, slide the squares into the hot oil and deep fry till golden brown and crisp. Drain on absorbent paper and arrange in a serving bowl.6. Serve hot with green chutney.
