These mix vegetable pakoras when served with a tangy imli chutney and chai make the perfect monsoon snack.MIX PAKODAIngredients1 cup shredded spinach leaves½ cup chopped fresh fenugreek leaves1 large onion, chopped2 medium potatoes, peeled and cut into small cubes1-2 green chillies, chopped¼ tsp carom seeds (ajwain)¼ tsp turmeric powder½ tsp red chilli powder¼ tsp asafoetida (hing)Salt to taste¼ tsp cumin powder½ tsp coriander powder1¼ cups gram flour (besan)A pinch of baking sodaOil for deep fryingGreen chutney to serveDate and tamarind chutney to serveMethod1. Take spinach in a large bowl. Add fenugreek leaves, onion, potatoes, and green chillies. 2. Add carom seeds, turmeric powder, red chilli powder, asafoetida, salt, cumin powder and coriander powder.3. Add besan in the same bowl and mix till well combined. Add a little water and mix to form a thick batter.4. Add a pinch of baking soda and mix well. 5. Heat sufficient oil in a kadai, drop in small portion of the prepared batter and deep fry till golden brown and crisp. Drain on an absorbent paper.6.
