Kadai Mix Vegetable Curry
INGREDIENTS:
Pepper - 1 tsp
Coriander seeds - 1 tsp
Fennel seeds - ½ tsp
Cloves - 10 nos.
Cardamom - 4 nos.
Mace - 2 nos.
Cumin seeds - 1 tsp
Red chillies - 1 tsp
Oil - As required
Cashewnut - 10 nos.
Onion - 2 nos.
Salt - As Per Taste
Turmeric powder - ½ tsp
Ginger garlic paste - 1 tsp
Roasted chana dal powder - 1 tsp
Pumpkin (pieces) - 1 cup
Carrot (pieces) - 1 cup
Beans (pieces) - 1 cup
Brinjal (pieces) - 1 cup
Tindora - 100gms
Chilli powder - 1 tsp
Tomato puree - 1 cup
Green peas - 100gms
Kasuri methi powder - ½ tsp
Butter - 3 cubes
Coriander leaves - 1 bunch
Cream - 1 cup
Salt - As Per Taste
Capsicum - 1 no.
DIRECTIONS:
Heat a pan, add pepper coriander seeds, fennel seeds, cloves, cardamom, mace, cumin seeds, red chillies dry roast it and crush into coarse powder.

Heat oil in a pan, add cashewnut, onion, salt and saute it till slightly transparent and add turmeric powder, ginger garlic paste until all the raw flavor is gone.
Then add roasted chana dal powder, pumpkin, carrots, beans, brinjal, tindora, chilli powder, tomato puree & cook it for few minutes by adding water.
Now, add capsicum, green peas, kasuri methi powder, masala powder, butter, coriander leaves, cream, salt mix it and cook it till the moisture oozes out the gravy. Then switch off the flame.

Tasty Kadai Mix Vegetable Curry ready to serve with hot rice or roti.
