Mixed Seafood Boodle Fight for the Holidays (Shrimp, Squid, Mussels)

Mussel Rice:
6 cloves of garlic, minced
oil
1/2 cup of white wine
1/2 kg mussels
2 tbsp butter
1/4 cup chopped parsley
salt and pepper
1/4 cup chopped leeks
3 cups of white rice
1/3 cup of vegetables stock

Shrimp
500g of peeled, cleaned deveined shrimp
oil
4 cloves of garlic, minced
2 tbsp peanut butter
1 tbsp sesame oil
1 tsp fish sauce
1/4 cup sliced green leeks

Squid
400g of squid
oil
4 cloves of garlic, minced
1/4 cup rice wine vinegar
1 tbsp tomato paste
1 tsp sesame oil
1/3 cup tomato sauce
1 tsp fish sauce

Eggplant
2 large eggplants sliced
2 tbsp sesame oil
1 tbsp white miso paste
2 tbsp olive oil
1/4 cup rice wine vinegar

Sigarilyas
2 cups of chopped sigarilyas
3 tbsp of oil
3 cloves of garlic, minced
1/4 cup vegetable stock
1/2 tsp fish sauce
1/2 cup coconut milk
pepper
