Mocha Marble Cake | Sanjeev Kapoor Khazana

Swirls of coffee flavoured cake batter mixed into regular cake batter to give the final product a beautiful marble like effect.

MOCHA MARBLE CAKE - (Serves - 4)

Ingredients

2 tablespoons coffee decoction
250 grams refined flour + dusting
250 grams butter + greasing
250 grams castor sugar
5 eggs
1 teaspoon vanilla essence
1 teaspoon baking powder
¼ cup cocoa powder
2-3 tablespoons oil
Icing sugar for dusting

Method

1. Preheat oven to 18º0 C. Grease a baking loaf tin with some butter and dust some flour.
2. Cream together butter and castor sugar in a bowl using an electric beater. Add eggs gradually and whisk well. Add vanilla essence and whisk.
3. Sieve together flour and baking powder into the mixture and fold well. Divide the batter equally into 2 different bowls.
4. Take cocoa powder in a bowl. Add oil and mix well.
5. Add cocoa-oil mixture in one portion and mix well. Add coffee decoction to another portion and mix well.
6. Line the greased tin with ½ of coffee batter and put cocoa batter on top. Put remaining coffee batter on top, insert a fork and swirl to create marble effect, level it out and tap.
7. Place the tin on a baking tray, put the tray in preheated oven and bake for 25-30 minutes.Remove from oven, cool and demould.
8. Dust with icing sugar and slice. Serve.
