Mojito Pops | Sanjeev Kapoor Khazana

Refreshing mojito freezed to make popsicles. Must try !

MOJITO POPS

Ingredients

2 lemons
4 tablespoons sugar syrup
Salt to taste
¼ cup fresh mint leaves

Method

1. Cut one lemon into thin slices and deseed.
2. Cut the other lemon into half.
3. Quarter one half and put into a glass. Keep the other half aside.
4. Add mint leaves and muddle well.
5. Transfer it into a large jar, add salt, sugar syrup and juice of remaining half lemon and sufficient water and stir well.
6. Cut the sliced lemon into half and put each half in a popsicle mould.
7. Add crushed ice and the mojito mixture and top with more crushed ice.
8. Set in the freezer for 1-2 hours or till set.
9. Serve chilled.
