Fresh radish is in season and here's one amazing way to sneak it into your diet. Try this flavour-packed Mooli Thepla any time of the day alongside some dahi and achaar.

MOOLI THEPLA

Ingredients

1 large radish with greens
Salt to taste
¼ tsp turmeric powder
¾ tsp cumin powder
1 tsp coriander powder
½ tsp red chilli powder
2 tsps sugar
2 tsps ginger-green chilli paste
¼ tsp carom seeds (ajwain)
1¼ cups whole wheat flour
¼ cup gram flour (besan)
2 tbsps white sesame seeds
1 tbsp yogurt
1½ tbsps oil + for cooking
Pickle for serving
Yogurt for serving

Method

1. Peel and grate the white part of the radish and chop the greens and transfer in a parat.
2. Add salt, turmeric powder, cumin powder, coriander powder, red chilli powder, sugar, ginger- chilli paste, carom seeds and mix well.
3. Add whole wheat flour, gram flour, white sesame seeds, yogurt, oil and mix well.
4. Knead to soft dough. Cover with a moist muslin cloth and set aside for 10-15 minutes.
5. Divide the dough into equal portion and roll into balls.
6. Dust some whole wheat flour on the work top, flatten the balls and roll into thin disks.
7. Heat a nonstick tawa. Place the prepared thepla and roast for a minute or till the underside is golden brown.
8. Flip and roast on other side for a minute. Drizzle some oil and continue to roast for 30 seconds on each side.
9. Serve hot with pickle and yogurt.
