MORINGA PESTO CROSTINIA crunchy and scrumptious crostini Ingredients1½ cups moringa leaves6-8 toasted baguette slices3-4 garlic cloves6-7 black peppercornsSea salt to taste¼ cup pine nuts½ lemon¼ cup grated parmesan cheese¼ cup olive oilGrilled vegetables½ small green zucchini½ small yellow squash2 small brinjals2 tbsps olive oilSalt to tasteCrushed black peppercorns to tasteToppings3-4 cherry tomatoes, halvedPickled onion for sprinklingFeta cheese for sprinklingChopped fresh parsley leaves for sprinklingMethod1. Put 1 cup moringa leaves, add 3-4 garlic clove, 6-7 black pepper corn, sea salt, to taste , ¼ cup pine nuts ,squeeze 1 lemon ,1/4 cup grated parmesan cheese, ¼ cup olive oil and blend into course paste.2. Transfer the mixture into a bowl and set aside3. Thinly slice green zucchini , yellow squash , small brinjals and set asdie.4. Heat 2 tbsp olive oil in a non-stick grill pan, add sliced vegetable and sprinkle salt and crushed black pepper corn and cook till grill make apperial from both the side.5. Arrange 4 toasted bread onto a plate .Spread moringa pesto evenly and place grilled vegetable on top( yellow squash, green zucchini, brinjals), cherry tomato, pickle onion ,feta cheese.6.
