Mouth Freshener / Dry Pan Masala Recipe Food Fusion

Today, Food Fusion had the honor of hosting Mrs. Mahtab Tariq, a true inspiration. She delighted us with her secret recipe for Mouth Freshener/Pan Masala, and shared her journey with the Food Fusion Community. Recipe in English:

Ingredients:
-Chuwaray (Dry dates) 250g
-Water as required
-Sukha nariyal (Dried coconut) soft 125g
-Misri (Rock sugar) 250g or to taste
-Saunf (Fennel seeds) 250g
-Kaddu ke beej (Pumpkin seeds) 125g
-Tarbooz ke beej (Watermelon seeds) 125g
-Dhania giri (Dried coriander seeds) 125g
-Safed til (Sesame seeds) 125g
-Elaichi ka danay (Cardamom seeds) 20 pods
-Silver coated fennel seeds 100g (optional)

Directions:
-Wash thoroughly dry dates & soak in water for 10 minutes then pat dry,deseed,chop & set aside.
-Chop dried coconut & set aside (dried coconut should be a soft).
-In a mortal & pestle,add rock sugar & crush into small pieces,take out small pieces & set aside (Dont throw powdered rock sugar as it can be used as sugar alternative).
-Heat wok,add fennel seeds & dry roast on low flame until it changes color (3-4 minutes),spread them on a large tray & set aside.
-In the same wok,add pumpkin seeds,watermelon seeds & dry roast on low flame for 3-4 minutes or until they crackle,spread them in the same tray & set aside.
-In the same wok,add dried coriander seeds & dry roast on low flame until its fragrant (3-4 minutes),spread them in the same tray & set aside.
-In the same wok,add sesame seeds & dry roast on low flame for 3-4 minutes or until they crackle,spread them in the same tray & set aside.
-In the same wok,add chopped dried coconut & dry roast on low flame until light golden (30-40 seconds),let it rest for 2-3 minutes then spread them in the same tray & set aside.
-In the same wok,add chopped dry dates & dry roast on low flame for 3-4 minutes,let it rest for 2-3 minutes & spread them in the same tray & set aside.
-Let the mix cool down completely (approx. 15 minutes).
-Add crushed rock sugar,cardamom seeds,silver coated fennel seeds & mix well.
-Can be stored in an airtight container until use (Yield: approx. 1.5 kg).

-Chuwaray (Dry dates) 250g

Directions:
-Chuwaray ko pani sa ache tarhan dho lein aur pani mein 10 minutes kliya soak ker lein phir pat dry karein aur deseed ker ka chop ker lein & side per rakh dein.
-Sukha nariyal ko chop ker lein & side per rakh dein
-Mortal & pestle mein misri dal dei aur small pieces mein crush ker lein,small pieces ko nikal ker side per rakh dein (powdered miri ko cheeni ki jagha use ker lein).
-Karahi garam karein aur saunf ko halki ancch per color change ho janay tak dry roast ker lein (3-4 minutes),large tray per pheela dein & side per rakh dein.
-Us he karahi mein kaddu ka beej aur tarbooz ka beej dal ker halki ancch per 3-4 minutes ya crackle hunay tak dry roast ker lein,large tray per pheela dein & side per rakh dein.
-Us he karahi mein dhania giri dal dein aur khushbu anay tak dry roast ker lein (3-4 minutes),large tray per pheela dein & side per rakh dein.
-Us he karahi mein safed til dal dein aur halki ancch per 3-4 minutes ya crackle hunay tak dry roast ker lein,large tray per pheela dein & side per rakh dein.
-Us he karahi mein chopped sukha nariyal dal dein aur halki ancch per light golden ho janay tak dry roast ker lein (30-40 seconds),2-3 minutes kliya rest dein aur large tray per pheela dein & side per rakh dein.
-Us he karahi mein chopped chuwaray dal dein ur halki ancch per 3-4 minutes kliya dry roast ker lein, 2-3 minutes kliya rest dein aur large tray per pheela dein & side per rakh dein.
-Mixture ko thanda ker lein (approx. 15 minutes).
-Crushed misri,elaichi ka danay aur silver coated fennel seeds dal ker ache tarhan mix ker lein.
-Airtight container mein dal ker store ker saktay han (Yield: approx. 1.5 kg).
