A flavoursome chicken curry which is popular in every Bengali household and a must-try for all the chicken lovers!

MURGIR JHOL

Ingredients

750 grams chicken, cut into 2 inch pieces on the bone
Salt to taste
2 medium onions, sliced
1½ tbsps chopped garlic
1 tsp ginger paste
2-3 green chillies, chopped
½ cup yogurt
1 tsp garam masala powder
¼ tsp turmeric powder
2 tsps red chilli powder
2 tsps lemon juice
¼ cup mustard oil
Jhol
3 tbsps mustard oil
2 medium potatoes, quartered
1 bay leaf
2-3 cloves
3-4 green cardamoms
6-8 black peppercorns
1 inch cinnamon stick, broken
2 large onions, sliced
A pinch of sugar
¼ tsp turmeric powder
Salt to taste
1 tbsp chopped fresh coriander leaves
To serve
Steamed rice

Method

1. Take chicken in a large bowl, add salt, sliced onion, garlic ginger paste, green chillies, yogurt, garam masala powder, turmeric powder, red chilli powder, lemon juice and mustard oil and mix well. Set aside to marinate for 45 minutes.
2. For the jhol, heat mustard oil in a non-stick pan, add potatoes and sauté till they turn golden brown. Drain them on a plate and set aside until in use.
3. Heat the mustard oil remaining the pan, add bay leaf, cloves, green cardamoms, black peppercorns, and cinnamon stick and sauté till fragrant.
4. Add onions, mix and sauté for 1-2 minutes. Add sugar, mix and sauté till the onions turn golden brown.
5. Add turmeric powder, mix and add the marinated chicken, sauté on high heat for 3-4 minutes. Cook further for 8-10 minutes.
6. Add fried potatoes, 1 cup hot water, adjust salt, and mix well. Cover and cook for 8-10 minutes.
7. Add coriander leaves, mix and take the pan off the heat. Transfer into a serving bowl and serve hot with steamed rice.
