Mushroom and Corn Burger | Sanjeev Kapoor Khazana

For all those mushroom lovers, this burger is a must try !

Mushroom and Corn Burger

Ingredients

10-15 button mushrooms, cut into quarters
½ cup sweet corn
4 burger buns
1 teaspoon oil
1 tablespoon chopped garlic
1 medium onion, finely chopped
Salt to taste
¼ teaspoon black pepper powder
¼ teaspoon red chilli flakes
2 medium potatoes, boiled, peeled and mashed
½ cup dried breadcrumbs
2 tablespoon mayonnaise
2 teaspoons mustard sauce
Few iceberg lettuce leaves
4 cheese slices
4 cherry tomatoes, for garnish


Method

1. Heat oil in a non-stick pan. Add garlic and onions and sauté.
2. Add mushrooms and corn and saute.
3. Add salt, pepper and chilli flakes and cook for 2 -3 minutes.
4. Once the mixture is cool add potatoes and breadcrumbs and mix well.
5. Shape the mixture into 4 equal portions and shape into patties.
6. Heat remaining oil in a pan and shallow fry till the patties are golden brown on each side. Drain on absorbent paper.
7. Cut the buns horizontally and lightly toast them.
8. To assemble the burger spread mayonnaise and mustard on each bun, place some iceberg lettuce leaves, the mushroom and corn patty, tomato slices and a slice of cheese. Top with the burger bun top.
9. Garnish with a cherry tomato toothpick skewer.
10. Serve
