Mushroom Cheddar Melts | Sanjeev Kapoor Khazana

Spicy mushroom and cherry tomato mixture spread over toasted baguette, topped with cheddar cheese and baked till cheese melts.

MUSHROOM CHEDDAR MELTS

Ingredients

10-12 button mushrooms, sliced
50 grams cheddar cheese
1 French baguette
1 small onion
2 tablespoons oil + for brushing
5-6 garlic cloves
6-7 cherry tomatoes
1-2 fresh thyme sprigs
Salt to taste
Crushed black peppercorns to taste
½ teaspoon red chilli flakes

Method

1. Halve the baguette and place on a baking tray. Put the tray in the oven and bake for 10-12 minutes.
2. Slice onion and 2-3 garlic.
3. Heat oil in a non-stick pan, add garlic and onion and sauté till translucent.
4. Add mushrooms and sauté further for a minute. Halve cherry tomatoes.
5. Brush the baked baguette with some oil. Rub garlic cloves over it and keep aside.
6. Add cherry tomatoes to the pan alongwith thyme and mix well. Add salt, crushed peppercorns and chilli flakes and mix well.
7. Place a portion of the mushroom on the baguette. Grate cheese on top.
8. Put the baguette on the baking tray and put the tray in the preheated oven and bake for 3-4 minutes.
9. Serve hot.
