Mushroom Fry Recipe in Tamil / Kalan Recipe / Mushroom Gravy / Oyster Mushrooms Fry / சிப்பி காளான் வறுவல்

Pan 1
----------
Oyster Mushrooms - 200 gms (Cleaned and strained well). Each petal slit into 2 or 3 pieces.
Olive Oil - 1 tbsp
Ginger - 1" finely diced
Garlic - 3 cloves finely diced
Green Chilly - 1 no slit lengthwise
Pepper Powder - 1/2 tbsp

Pan 2
----------
Butter - 1 tbsp
Cumin Seeds - 1 tsp
Onion Big - 1
Tomato - 1 medium finely diced
Salt - As required
Chilly Powder - 1/2 tbsp
Garam Masala Powder - 1 tsp
Turmeric powder - 1/4 tsp

Pepper Powder - 1 tsp
Coriander Leaves - For garnishing


Note: Mushrooms have to be rinsed and drained well so that they do not let out much water and become soggy. Do not soak and wash mushrooms. Wash them individually or in running water to avoid water absorption.

We are cooking with 2 pans to prevent mushrooms getting soggy in masala. This will retain the perfect texture of mushrooms at the same time, will help blend with the masalas as required.

Heat pan 1 and add Olive oil.
Add garlic and ginger. Add green chilly.
Saute for few seconds. Add the mushrooms.
In medium flame saute gently until the mushrooms start letting out water.
Now simmer, cook in low flame without much sauteing until the water evaporates.
Add pepper powder and suate in a gentle manner for a couple of minutes. Now Pan 1 is ready for the mixing.

Simultaneously prepare contents of pan 2.
Heat pan 2 and add butter.
Add cumin seeds. Then add the onions. Saute well until the onions become translucent.
Now add the tomatoes and cook until the tomatoes become soft.
Now add the masalas, salt and cook until they blend well. You can sprinkle some water here. (Do not add much water.)

After a couple of minutes when pan 1 is ready, transfer contents from pan 2 to pan 1.
In medium flame, mix the contents and cook for about 2 to 3 minutes until they both blend well. Gently saute at times.

If you want to make it little more spicy, sprinkle 1 tsp of freshly ground pepper powder, just before switching off the flame and give it a gentle mix.
Serve Hot!

Ensure not to overcook mushrooms.
