A delight for the vegetarians, galouti kabab made with mushrooms. Do try !MUSHROOM GALOUTIIngredients20-25 button mushrooms, sliced1 tbsp oil + for shallow frying2-3 green chillies, chopped1 large onion finely chopped½ tbsp garlic paste½ tbsp ginger paste1 tsp red chilli powder1½ tsp cumin powder2 tsps garam masala powder½ tsp turmeric powder2 tbsps chopped fresh coriander Salt to taste2 medium potatoes, boiled, peeled and grated3 tbsps roasted gram flour 50 grams cottage cheeseGreen chutney for servingMethod1. Heat oil in a non-stick pan, add green chillies and onions sauté till onions are translucent.2. Add ginger paste, garlic paste and cook for 1-2 minutes. Add mushrooms and cook till golden brown in colour.3. Add red chilli powder, cumin powder, garam masala and turmeric powder. Add salt and 1 tbsp chopped coriander. Set aside to cool.4. Take the mushroom mixture in a food processor, add potatoes, gram flour, remaining chopped coriander and crumble in the cottage cheese. Blend to a smooth paste.5. Heat oil in a shallow non-stick pan.6. Shape the mushroom mixture into patty and shallow fry till golden on both the sides.
