Mushroom Galouti | Sanjeev Kapoor Khazana

A delight for the vegetarians, galouti kabab made with mushrooms. Do try !

MUSHROOM GALOUTI

Ingredients

20-25 button mushrooms, sliced
1 tbsp oil + for shallow frying
2-3 green chillies, chopped
1 large onion finely chopped
½ tbsp garlic paste
½ tbsp ginger paste
1 tsp red chilli powder
1½ tsp cumin powder
2 tsps garam masala powder
½ tsp turmeric powder
2 tbsps chopped fresh coriander
Salt to taste
2 medium potatoes, boiled, peeled and grated
3 tbsps roasted gram flour
50 grams cottage cheese
Green chutney for serving

Method

1. Heat oil in a non-stick pan, add green chillies and onions sauté till onions are translucent.
2. Add ginger paste, garlic paste and cook for 1-2 minutes. Add mushrooms and cook till golden brown in colour.
3. Add red chilli powder, cumin powder, garam masala and turmeric powder. Add salt and 1 tbsp chopped coriander. Set aside to cool.
4. Take the mushroom mixture in a food processor, add potatoes, gram flour, remaining chopped coriander and crumble in the cottage cheese. Blend to a smooth paste.
5. Heat oil in a shallow non-stick pan.
6. Shape the mushroom mixture into patty and shallow fry till golden on both the sides. Serve hot with green chutney.
