Mushroom Hummus Toast Sanjeev Kapoor Khazana

Mediterranean & Middle East meets Continental cuisine. Sourdough bread toasted in butter and slathered with hummus is a delightful appetiser.

MUSHROOM HUMMUS TOAST

Ingredients

10-12 button mushrooms, cleaned
8 tbsps ready-made hummus
4 sourdough bread slices
1 tbsp olive oil
1 tsp butter + for toasting
1 tbsp finely chopped garlic
2-3 sprigs of fresh thyme
Salt to taste
1 tbsp Worcestershire sauce
Micro greens for garnish
Fresh dill sprigs for garnish

Method

1. Slice the button mushrooms.
2. Heat olive oil and butter in a non-stick pan. Add garlic and pluck the leaves of thyme and add into the pan and mix well.
3. Add the mushrooms and mix. Add salt and mix well. Cook for 2-3 minutes.
4. Add Worcestershire sauce and mix well. Transfer on a plate.
5. Heat some butter in the same pan. Place the sourdough bread slices and toast on both sides till golden brown.
6. Place the toasted bread slices on a serving plate. Apply some hummus, add a portion of the mushroom on to each bread slice.
7. Garnish with micro greens, and dill sprigs and serve.
