Mushroom Risotto - keto risotto - keto recipe - cauliflower risotto - healthy recipe channel

I am a huge mushroom risotto fan, as far as the taste and consistency of it and technique for cooking it. As far as nutritional value of traditional risotto, not so much. I wanted to try and see if I could modify it some how to make the recipe keto diet friendly. The most simple way I could think of was using one of my favorite rice substitutes, the almighty cauliflower. Using Cauliflower in Place of Rice and a ton of mushrooms in the recipe, would keep the carbs well under 10 grams per serving and pose no threat to knocking any one out of Ketosis even if they ate this 3 times a day. In my case while intermittent fasting I only eat 2 meals per day so I would have no issues with the carbs in this recipe even if I ate 3 servings for lunch, I would still be burning away ketones after such a filling meal that I probably would not even be able to eat.
