Makhni Mutton Chanay
Nurpur-Butter


Ingredients for Mutton Stock:
Water as req
Onion cubes 1/4 cup
Garlic cloves 3-4
Salt 1 tsp
Mutton 700 g

Ingredients for Makhni Mutton Chanay:
Butter ¼ cup
Oil 3 tbsp
Red chili powder 2 tsp
Ginger garlic paste 1 ½ tbsp
Water 2-3 tbsp
Onion paste 1 cup
Tomato puree ½ cup
Turmeric powder 1/2 tsp
Coriander powder 1 tbsp
Cumin powder 1 tsp
Yogurt ½ cup
Mutton (boiled)
Chickpeas (boiled) 2 cups
Mutton stock 1L or as req
Salt 1 tsp / to taste
Green Chilies 4-5
Black pepper crushed 1 tsp
Whole spice powder 1 tsp

Ingredients for Tari:
Butter ¼ cup
Green Cardamom 2
Star Anise 1
Red chili powder 1 tsp
Almond (boiled) ¼ cup

Directions for Mutton Stock Preparation:
1. In a pot add water, onion, garlic cloves, salt, and mutton. Boil until the meat is fully tender. Skim off the scum. Set aside.
Directions for Makhni Mutton Chanay Preparation:
2. Now, melt butter in another pot. Add oil to prevent the butter from burning. Add red chili powder and fry for a minute. Add little water to prevent the chilies from burning.
3. Add ginger garlic paste and cook for a minute over low to medium flame.
4. Add onion paste and cook for 4-5 minutes. Then add tomato puree, turmeric powder, coriander powder, cumin powder and cook until oil separates.
5. Add yogurt and boiled mutton and cook for 3-4 minutes. Add chickpeas and cook for 2-3 minutes.
6. Add mutton stock and simmer for 8-10 minutes until the stock thickens. Add salt, green chilies and mix well.
7. Add black pepper powder and whole spice powder and cook until stock thickens. Your Makhni Mutton Chanay are ready. Set aside.
Directions for Tari Preparation:
8. Melt butter in a pan and turn off flame. Add green cardamom, star anise, red chili powder and almonds.
9. Turn on flame and cook for a minute over low flame.
10. Add this tari on the mutton chanay and serve with naan.
