~Mutton Curry~
Prep time - 20mins
Cooking time - 60mins
(Serves - 4)

INGREDIENTS -
For Kunal's Special Garam Masala:
Black cardamom - 2nos
Mace (Javitri) - 2large blades
Cardamom - 8nos
Cloves - 5nos
Pathar phool - a large piece
Peppercorn - 20nos
Cinnamon - 2nos (2inch sticks)
Cumin - 1½ tbsp
Coriander seeds - 6tbsp
Bayleaf - 1no

For Curry:
Oil - ¾ cup
Bayleaf - 1no
Cumin - 2tsp
Black cardamom - 1no
Cardamom - 4nos
Onion sliced - 3cups
Kashmiri chilli powder - 2tbsp
Coriander powder - 1tbsp
Kasoori methi leaves - 2tsp
Curd (beaten) - 1cup
Green chillies chopped - 2nos
Tomato puree (fresh) - 4cups
Coriander chopped - a handful

For Marination:
Mutton (Nalli Boti Chaamp) - 1kg
Salt - to taste
Ginger paste - 2tbsp
Garlic paste - 2tbsp
Turmeric - 1tsp
