This unique method brings out the best of flavors using heat transfer directly from the salt. #happycookingtoyou #foodfusion #digitalammi #LifebuoyPakistan #Superfasthandwash Written Recipe: https://bit.ly/3CJfsJxRecipe in English:Ingredients:-Mutton dasti (Mutton shoulder with fat) approx. 1.5 kg -Hari mirch (Green chilli) paste 2 tbs-Adrak lehsan paste (Ginger garlic paste) 1 & tbs-Lemon juice 3-4 tbs-Lal mirch powder (Red chilli powder) tbs or to taste -Namak (Salt) tbs or to taste-Zeera powder (Cumin powder) 1 & tsp-Kali mirch powder (Black pepper powder) 1 tsp-Dhania powder (Coriander powder) 1 tsp-Cooking oil 2 tbs-Tamatar (Tomatoes) 3 medium-Lehsan (Garlic) bulbs 2 -Cooking oil 1-2 tbs -Namak (Salt) as required-Cooking oil 1 tsp-Makhan (Butter) 2 tbs-Namak (Salt) tsp or to taste-Lal mirch (Red chilli) crushed 1 tsp-Imli pulp (Tamarind pulp) 1 tbs-Hara dhania (Fresh coriander) chopped 2 tbs-Hara dhania (Fresh coriander) choppedDirections:-Make small incisions/gashes in mutton leg & set aside.-In a large bowl,add green chilli paste,ginger garlic paste,lemon juice,red chilli powder,salt,cumin powder,black pepper powder,coriander powder,cooking oil & whisk well.-Add mutton shoulder & rub well on both sides,cover with cling film & marinate for 8 hours to overnight in refrigerator.-On a clean working surface,spread aluminum foil & butter paper.-Place tomatoes,garlic bulbs,drizzle cooking oil & place marinated mutton leg.-Wrap mutton shoulder completely in butter paper then seal properly in aluminum foil.-In a deep pot,add salt,cover & preheat on medium flame for 10 minutes then carefully takeout half quantity of salt in a separate pan & reserve for later use. -Now place aluminum foil wrapped mutton leg on heated salt & add remaining heated salt over it cover & cook on low flame for 1 hour & 30 minutes.-Carefully remove the salt & take out aluminum foil wrapped mutton shoulder & set aside. -Remove tomato skin & take out in a bowl,squeeze garlic bulb to excrete out garlic pulp in the bowl & also add all the remaining juice left from mutton on aluminum foil then blend well with the help of hand blender. -In a saucepan,add cooking oil,butter & let it melt.-Add blended mixture,mix well & bring it to boil.-Add salt,red chilli crushed,tamarind pulp,fresh coriander,mix well & cook for 2-3 minutes.-Serve salt roasted mutton (dasti) on saffron rice & pour prepared sauce.-Sprinkle fresh coriander & serve!Note:Save the salt, it can be reused for same purpose again. Recipe in Urdu:Directions:-Mutton leg per small incisions/gashes laga lein & side per rakh dein.-Baday bowl mein hari mirch paste,adrak lehsan paste,lemon juice,lal mierch powder,namka,zeera powder,kali mirch powder,dhania powder aur cooking oil dal ker ache tarhan whisk ker lein.-Mutton shoulder dal ker ache tarhan rub karein aur cling film sa cover ker ka 8 hours sa overnight kliya refrigerator mein marinate ker lein.-Clean working surface per aluminum foil & butter paper laga lein.-Tamatar,lehsan aur cooking oil dal ker marinated mutton leg rakh dein.-Mutton shoulder ko butter paper mein wrap karein aur aluminum foil mein properly seal karein.-Deep pot mein namak dal ker dhak dein aur 10 minutes kliya darmiyani ancch per preheat karein phir aur carefully namak ki half quantity ko alag bowl mein nikal lein & bad mein use kernay kliya side per rakh dein.-Ab aluminum foil wrapped mutton leg ko heated salt mein rakh ker upper sa remaining heated salt dal dein aur halki ancch per 1 hour & 30 minutes kliya paka lein.-Salt ko carefully remove karein aur aluminum foil wrapped mutton shoulder ko nikal ker side per rakh dein.-Tamatar ki skin ko remove ker lein aur bowl mein dal dein,lehsan ko ache tarhan squeeze ker lein aur hand blender ki madad sa ache tarhan blend ker lein.-Saucepan mein cooking oil aur makhan dal ker melt ker lein.-Blender mixture dal ker ache tarhan mix karein aur ubal anay dein.-Namak,lal mirch crushed,imli pulp aur hara dhania dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.-Salt roasted mutton (dasti) ko saffron rice aur tayyar sauce ka saath serve karein.-Hara dhania dal ker serve karein!
