"Do" means two or twice and "pyaaza" means onions. As the name implies this classic North Indian Mutton dish features lavish amounts of onions. MUTTON DO PYAAZAIngredients 450 grams boneless mutton, cut into 1 inch pieces and boiled 1 large onion (pyaaz), cut into cubes and layers separated 2-3 tablespoons ghee½ teaspoon cumin seeds (jeera)2 green chillies, slit½ cup onion paste1 tablespoon ginger-garlic paste¼ cup tomato puree1 teaspoon red chilli powder¼ teaspoon turmeric powder1 teaspoon coriander powder1 teaspoon red chilli paste½ cup chicken stock2 tablespoons yogurtSalt to taste1 large green capsicum, cut into squares2 teaspoons pomegranate seed powder1 teaspoon garam masala powder1 teaspoon lemon juiceOnion rings for garnishingFresh coriander sprig for garnishingLemon wedge for garnishingMethod1. Heat ghee in a steel handi. Add cumin seeds and once they begin to change colour, add green chillies, onion paste, mix well and sauté for 2-3 minutes. 2. Add ginger-garlic paste, mix and sauté for a minute. Add tomato puree, mix well and cook for a minute.3. Add chilli powder, turmeric powder, coriander powder, chilli paste and 2-3 tablespoons chicken stock, mix well and cook for 2 minutes. 4. Add yogurt, mix well and cook for 1-2 minutes. Add mutton pieces, salt and remaining chicken stock, mix well and simmer for 5 minutes.5. Add onions, capsicums, pomegranate seed powder, mix, cover and cook till the mutton is fully done. 6. Add garam masala powder and lemon juice and mix well. 7. Garnish with onion rings, coriander sprig and lemon wedge and serve hot.
