Mutton Ishtew | मटन इश्टू | Kerala Recipes | Sanjeev Kapoor Khazana

Another gem of a recipe from Kerala !! This stew has mutton pieces cooked in coconut milk and flavoured with freshly ground spice mix, is light and flavourful.

MUTTON ISHTEW

Ingredients

750 grams mutton, cut into 2-inch pieces on the bone and boiled
5-6 black peppercorns
¼ tsp cumin seeds
2 tsps split Bengal gram (chana dal)
½ tsp coriander seeds
4 tbsps oil
2star anise
1 inch cinnamon stick
4 green cardamoms
2 medium potatoes, peeled cut into 6-8 pieces
10-12 curry leaves
4-5 green chillies, slit
2 cups thin coconut milk
Salt to taste
½ cup thick coconut milk
Fried curry leaves for garnish

Method

1. Heat a shallow pan. Add black peppercorns, cumin seeds, split Bengal gram and coriander seeds and dry roast till fragrant. Allow to cool and transfer in a grinder jar. Grind to a fine powder.
2. Heat oil in earthenware pot. Add star anise, cinnamon and green cardamoms and sauté till fragrant.
3. Add potatoes and mix well. Add curry leaves, green chillies, ground powder and sauté for 30 seconds.
4. Add thin coconut milk and cook on medium heat for 6-8 minutes,
5. Add mutton pieces, salt and cook on medium heat for 4-5 minutes.
6. Add thick coconut milk and mix well. Cook for 2-3 minutes.
7. Transfer into a serving bowl, garnish with fried curry leaves and serve hot.

Chef’s tip: Instead of throwing the water in which the mutton has been cooked, use it as a stock for meat based soups.
