Lemon JuiceSalt to taste1 tsp. Garam Masala PowderFor Tempering:-5 tbsp. Ghee2 Bay Leaves2-inch stick Cinnamon2 Black Cardamoms4 Green CardamomsFor Paste:-1 cup Plain Yogurt1 tsp. Asafoetida3 tbsp. Kashmiri Chilli Powder2 tbsp. Ginger powder1 tbsp. Fennel powderWater as requiredMethod:-- In a bowl marinate the mutton by adding salt and lemon juice for 30 minutes.- Heat a pan and melt ghee in it.- Add bay leaf, black cardamom, cinnamon, green cardamom and the marinated mutton.- Sear the meat until golden brown in colour.- In another bowl mix the paste ingredients together with a whisk.- Add this mixture to the seared mutton and mix thoroughly.- Sear on high flame for 2-3 minutes.- Add water and cover with a lid.
