Food Blogger Tarika Singh brings you a delicious and mouth watering no bake Lemon Cheesecake recipe. It has a biscuit crumbly layer at the bottom and a smooth creamy cheesecake layer on top. Enjoy this delicious recipe with some plum sauce.

Ingredients:

For the base:
150 gms digestive biscuits
50 gms butter, melted

For the filling:
500 gms cream cheese
400 gms condensed milk
1tsp vanilla extract
zest of 1 lemon
1/4 cup lemon juice
1 Tbs gelatine powder, dissolved in 3 Tbs of warm water

For the plum sauce:
500 gms fresh plums
1/4 cup soft brown sugar
Puree the plums in a blender & then pass it through a muslin-lined sieve to remove an bits of skin.
Cook the pureed & strained plum sauce with sugar until it thickens & reduces slightly. A foamy layer of impurities will form over the sauce as you cook it, remove this layer. Let it cool completely & serve chilled.


Method:

For Biscuit Layer:
-Grind 150 grams of digestive biscuits.
-Put them in a separate bowl.
-To the biscuit crumbs add 50 grams of melted butter.
- Don't mix all the butter in one go, do it in 2 or 3 batches.
-Mix it well till it forms clumps together.
-Line the bottom with the parchment paper.
- Now put the mixture at the bottom of the spring-form pan and get a nice even flat layer.
-Cover it up with cling film wrapping paper and keep it in the refrigerator for at least an hour.

For the Filling
- Take a tablespoon of gelatin powder and add 3 tablespoons of hot water and whisk it to let the gelatin dissolve completely. Let it cool.
-Take 500 grams of cream cheese and beat it up.
- Add condensed milk.
-Add flavorings like Vanilla extract, lemon zest, quarter cup of freshly squeezed lemon juice and the gelatin.
-Blend it all together. Remove the biscuit layer from the refrigerator.
- Now pour the cream cheese mixture on the biscuit layer to get an even surface.
-Wrap it up with cling film.
- Keep it in the refrigerator and let it set for about 3 -4 hours.
- Then remove it from the refrigerator and run the knife to the edges of the spring form pan.
-Add some plum sauce to the cake and enjoy this delicious recipe.
