Easy Creamy Chicken Stew Recipe - Glen & Friends Cooking is making a crazy delicious Chicken Stew Recipe!

Ingredients:
6 chicken thighs, deboned skin removed
125 mL (½ cup) butter
2 chopped onions
2 cloves garlic, minced
60 mL (¼ cup) all-purpose flour
1L (4 cups) chicken broth
2 carrots, chopped
2 celery ribs, chopped
Handful mushrooms, sliced
5 mL (1 tsp) rosemary
2 mL (½ tsp) thyme
2 mL (½ tsp) summer savoury
1 mL (¼ tsp) sage
2 bay leaves
Salt and pepper to taste
125 mL (½ cup) 35% cream
250 mL (1 cup) frozen corn
250 mL (1 cup) frozen peas
250 mL (1 cup) edamame or green beans


Method:
Cut the chicken into spoon sized pieces.
Place a large heavy saucepan over medium heat and toss in the butter.
Add a single layer of chicken pieces and patiently brown them until they’re caramelized on all sides.
Remove from the pan and rest on a plate.
Add the onions and the garlic to the pan and sauté until translucent.
Stir in the flour and then whisk in the chicken broth.
Bring to a simmer and add the vegetables, herbs and chicken.
Season with salt and pepper.
Cover and simmer for 30 minutes or so.
Stir in the cream, corn, peas, and edamame.
Continue cooking until the frozen veg is heated through.
