Noodle Cake with Chicken | Sanjeev Kapoor Khazana

Shallow fried noodle cake topped with spicy chicken mixture.

NOODLE CAKE WITH CHICKEN

Ingredients

1 cup noodles, boiled
2 boneless chicken breasts
2 fresh red chillies
2 tablespoons chopped garlic
2 tablespoons chopped spring onion greens
2 tablespoons toasted sesame seeds
Salt to taste
Crushed black peppercorns to taste
1 egg
1 tablespoon oil + for shallow frying
½ teaspoon chopped ginger
1 medium capsicum, cut into medium cubes
1 tablespoon hoisin sauce

Method

1. Finely chop 1 red chilli.
2. Take noodles in a bowl. Add chopped red chilli, 1 tablespoon chopped garlic, 1 tablespoon chopped spring onion greens, 1 tablespoon sesame seeds, salt and crushed peppercorns and mix well.
3. Break egg in a bowl, lightly beat it, add half to the noodles and mix well. Set aside.
4. Slit and cut chicken into medium pieces.
5. Divide noodle mixture into equal portions.
6. To make noodle cake, heat some oil in a non-stick pan. Place each noodle portion on it, flatten and shallow-fry till golden and crisp from both sides. Drain on absorbent paper.
7. Heat 1 tablespoon oil in another non-stick pan. Add ginger and remaining garlic and sauté for 30 seconds.
8. Chop remaining red chilli and add to the pan alongwith capsicum and toss to mix. Add chicken pieces, salt and crushed peppercorns, toss to mix and cook till chicken is done.
9. Add hoisin sauce and toss to mix.Add remaining spring onion greens and remaining sesame seeds and mix well.
10. Place prepared noodle cakes on a serving plate, top with chicken mixture and serve hot garnished with remaining sesame seeds.

Preparation time: 10-15 minutes
Cooking Time: 15-18 minutes
