Oats Upma And Fruit And Nut Smoothie | Majha Kitchen | Sanjeev Kapoor Khazana

Regular upma given twist with oats and served with healthy fruit and nut smoothie - a perfect breakfast treat

OATS UPMA

Ingredients

2 cups rolled oats
1 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon split skinless black gram (dhuli urad dal)
1 inch ginger, grated
¼ teaspoon asafoetida (hing)
8-10 curry leaves
2 green chillies
2 small onions, finely chopped
Salt to taste
1 small tomato, finely chopped
A pinch castor sugar
2-3 tablespoons green peas
Fresh coriander sprigs for garnishing

Method

1. Dry-roast oats in a non-stick pan on low heat for 2-3 minutes. Transfer on a plate.
2. Heat oil in the same non-stick pan. Add mustard seeds and let it sputter. Add split black gram, ginger, asafoetida and curry leaves and sauté for 30 seconds.
3. Break green chillies, add to pan and sauté for 10 seconds. Add onion and salt and sauté on low heat till onion turns translucent.
4. Add tomato and sauté for 10 seconds. Add castor sugar and green peas, mix, cover and cook for 3-4 minutes.
5. Add roasted oats and mix. Add 3 cups water, mix, cover and cook for 5-7 minutes.
6. Put some oats upma in a ramekin moulds and press. Invert the bowl on individual serving platters and demould.
7. Serve hot garnished with coriander sprigs.

FRUIT AND NUT SMOOTHIE

Ingredients

20-25 lychee, peeled and deseeded
10-12 almonds
10-12 walnuts
½ cup yogurt
1 tablespoon castor sugar
2 cups milk

Method

1. Blend together almonds, walnuts, lychee flesh, yogurt, castor sugar and milk to make a smooth mixture.
2. Serve.
