Regular upma given twist with oats and served with healthy fruit and nut smoothie - a perfect breakfast treatOATS UPMAIngredients2 cups rolled oats1 tablespoon oil1 teaspoon mustard seeds1 teaspoon split skinless black gram (dhuli urad dal)1 inch ginger, grated¼ teaspoon asafoetida (hing)8-10 curry leaves2 green chillies2 small onions, finely choppedSalt to taste1 small tomato, finely choppedA pinch castor sugar2-3 tablespoons green peasFresh coriander sprigs for garnishingMethod1. Dry-roast oats in a non-stick pan on low heat for 2-3 minutes. Transfer on a plate.2. Heat oil in the same non-stick pan. Add mustard seeds and let it sputter. Add split black gram, ginger, asafoetida and curry leaves and sauté for 30 seconds. 3. Break green chillies, add to pan and sauté for 10 seconds. Add onion and salt and sauté on low heat till onion turns translucent. 4. Add tomato and sauté for 10 seconds. Add castor sugar and green peas, mix, cover and cook for 3-4 minutes. 5. Add roasted oats and mix. Add 3 cups water, mix, cover and cook for 5-7 minutes.6. Put some oats upma in a ramekin moulds and press. Invert the bowl on individual serving platters and demould.7. Serve hot garnished with coriander sprigs. FRUIT AND NUT SMOOTHIEIngredients20-25 lychee, peeled and deseeded10-12 almonds10-12 walnuts½ cup yogurt1 tablespoon castor sugar2 cups milkMethod1. Blend together almonds, walnuts, lychee flesh, yogurt, castor sugar and milk to make a smooth mixture. 2. Serve.
