If you love Pickles, then try this Punjabi Lemon recipe which is oil free, preservative free, all natural goodness. Easy to prepare, this lemon can last in your pantry for months. Just be careful while handling this pickle, it doesn't like moisture. Thoroughly wash/dry 3-4 large lemons, cut them in bite size pieces. Rub them with 3 tbsp sugar, 1 tbsp salt and 3 tbsp ajwain. Optional- 1/2 tsp black salt. Transfer them in a glass container and set them out in the sun. Continue doing so for 7 days. Shake it thoroughly. Once the skin turns brown, soft and tender, you know pickle is ready. Enjoy it with flatbread of your choice.
