ONION BONDAIngredients2 large onions1½ cups gram flour (besan) 8-10 curry leaves2 green chillies1 inch gingerSalt to taste¼ tsp caroms seeds (ajwain)1 tsp red chilli powder2 tsps coriander powder1 tsp cumin powder¼ tsp turmeric powderA pinch of baking sodaOil for greasing + for deep fryingGreen chutney to serveMethod1. Thinly slice the onion. Finely shred the curry leaves, finely chop green chillies and grate the ginger. 2. Transfer the sliced onion in a large bowl. Add salt and mix well. Set aside for 15-20 minutes.3. Add the grated ginger, chopped green chillies, and shredded curry leaves and mix well. Add carom seeds, red chilli powder, coriander powder, cumin powder, turmeric powder and gram flour and mix well. Add baking soda and mix till the mixture comes together and forms a soft dough.4. Grease your palms with some oil, take a portion of the mixture and shape it into a ball. This is a bonda.5. Heat sufficient oil in a kadai. Gently slide in the bondas into the hot oil and deep fry till golden brown and crisp. Drain on an absorbent paper. 6.
