Open Caprese Sandwich | Sanjeev Kapoor Khazana

This grilled caprese is made on a loaf brushed with garlic, oil and topped with fresh mozzarella, tomatoes, basil, and balsamic.

OPEN CAPRESE SANDWICH

Ingredients

4 focaccia bread slices
Pesto for spreading
2 medium tomatoes, sliced
150 grams fresh mozzarella cheese, sliced
Fresh basil leaves as required
Crushed black peppercorns for sprinkling
Salt to taste
Balsamic reduction for drizzling

Method

1. Toast bread slices on a non-stick pan from both sides till golden. Transfer on the worktop.
2. Spread some pesto on toasted bread slices. Put some tomato slices and mozzarella slices alternatively. Put few basil leaves and sprinkle some crushed peppercorns and salt on top.
3. Put prepared sandwiches on serving platter, drizzle some balsamic reduction on top and serve immediately.
