Open Fire Pit Flank Steak Tacos Recipe - Glen And Friends Cooking
Glen is out at the fire pit cooking up some marinated flank steak tacos over an open fire. He's also making a super simple fire roasted salsa - salsa molcajete, and a roasted bean and jalapeños. Campfire cooking, open flame cooking, cooking tacos over firewood is so great!

Flank Steak Marinade:
2 cloves garlic, minced
1 jalapeño, minced
Chopped cilantro leaves
Salt and freshly ground black pepper
2 limes, juiced
1 grapefruit, juiced
125 mL (1/2 cup) olive oil
1 Kg (2 lb) flank Steak

Method:
Mix together all ingredients, and place in a sealable container.
Marinade for 2-3 hours.

Fire Roasted Salsa:
4 onions
4 tomatoes
3 jalapeños
1 head garlic
Salt to taste
Lime juice to taste

Method:
Fire grill the vegetables until charred and soft.
Remove from grill and cover for a few minutes to cool and soften the skins.
Pull off the worst of the charred skins, and any stems, then pulse in a food processor to combine; or grind in a molcajete.
Taste and refine seasoning with salt and lime juice.
