OPEN MASALA TOAST

Ingredients

4 white bread slices
2 medium raw bananas, boiled, peeled and grated
¼ teaspoon turmeric powder
½ teaspoon red chilli powder
½ teaspoon garam masala powder
Salt to taste
1-2 green chillies, finely chopped
1 tablespoon lemon juice
1 tablespoon chopped fresh coriander leaves
1 tablespoon date-tamarind chutney + for topping
Butter as required
Oil for shallow-frying
Green chutney for topping
Chaat masala for sprinkling
Sev for sprinkling
Fresh coriander leaves for garnishing

Method

1. To prepare masala, mix together raw bananas, turmeric powder, chilli powder, garam masala powder, salt, green chillies, lemon juice, coriander leaves and 1 tablespoon date-tamarind chutney in a bowl.
2. Trim the edges of each bread slice and cut into 4 equal squares.
3. Apply some butter on one side of each bread square and spread some raw banana mixture on top.
4. Heat some oil on a non-stick tawa. Place the bread squares with masala side downwards and toast till golden brown. Flip, drizzle some oil in top and toast till golden brown and crisp from downside.
5. Place the toasted bread squares on a serving platter. Top with some green chutney and date-tamarind chutney. Sprinkle some chaat masala, and sev on top.
6. Serve hot garnished with coriander leaves.
