PREP TIME: 15 MINUTESCOOK TIME: 35 MINUTESSERVES: 4-5 INGREDIENTS100g catfish1 medium yellow onion5 cloves of garlic1 small ginger5 grains of selim (hwentia)1 tsp anise seeds3 tbsp cayenne pepper powder1 tbsp orange zest50g Orange juice3 Irish potatoes, cut into wedges.3 assorted bell peppers, cut into wedges.1 tbsp orange pepper2 medium oranges , slicesVegetable oilSaltDIRECTION Pre-heat the oven at 180c. Cut catfish into pieces, wash with orange and water then set aside. Blend yellow onion, garlic, ginger, grains of selim, anise seeds, cayenne pepper powder, orange zest, salt and orange juice into a smooth mixture. Drizzle the vegetable oil on a baking tray, place the catfish and pour the blended mixture and rub onto the catfish. Add potatoes, assorted peppers, orange pepper, orange slices and drizzle with vegetable oil. Bake at 180c for 30-35 minutes. Orange grilled catfish ready to serve.
