Orange Grilled Catfish

COOK TIME: 35 MINUTES
SERVES: 4-5

INGREDIENTS
100g catfish
1 medium yellow onion
5 cloves of garlic
1 small ginger
5 grains of selim (hwentia)
1 tsp anise seeds
3 tbsp cayenne pepper powder
1 tbsp orange zest
50g Orange juice
3 Irish potatoes, cut into wedges.
3 assorted bell peppers, cut into wedges.
1 tbsp orange pepper
2 medium oranges , slices
Vegetable oil
Salt

DIRECTION
Pre-heat the oven at 180c.
Cut catfish into pieces, wash with orange and water then set aside.
Blend yellow onion, garlic, ginger, grains of selim, anise seeds, cayenne pepper powder, orange zest, salt and orange juice into a smooth mixture.
Drizzle the vegetable oil on a baking tray, place the catfish and pour the blended mixture and rub onto the catfish.
Add potatoes, assorted peppers, orange pepper, orange slices and drizzle with vegetable oil.
Bake at 180c for 30-35 minutes.
Orange grilled catfish ready to serve.
