This fusion recipe quesadillas is stuffed with palak paneer mixture.PALAK PANEER QUESADILLAS Ingredients1 cup blanched and chopped spinach (palak)250 grams cottage cheese (paneer)8 refined flour tortillas 1 tablespoon olive oil + for drizzling ½ teaspoon cumin seeds1 teaspoon chopped garlicSalt to taste 1 tablespoon fresh cream1 teaspoon lemon juice Method1. Heat olive oil in a non-stick pan. Add cumin seeds and sauté for 30 seconds.2. Add garlic and sauté for a minute. Add spinach, mix and cook for 2 minutes. Add salt and mix. 3. Switch off heat, add cream and lemon juice and mix well. 4. Heat a non-stick tawa. Place a tortilla and spread a portion of the cooked spinach mixture on top.5. Grate some cottage cheese, top with processed cheese and mozzarella cheese. Cover with another tortilla and drizzle some olive oil on the sides. Cook, flipping, till the cheese melts and both sides turn golden.6. Cut into wedges and serve hot with tomato ketchup.
