Palak Paneer | Simple Vegetarian Khana With Chef Saurabh | Sanjeev Kapoor Khazana

Palak Paneer is a healthy, nutritious and delicious north-indian dish which is prepared like a restaurant right at home!

PALAK PANEER

Ingredients

2 large bunches spinach (palak)
250 grams cottage cheese (paneer), cut into 1 inch cubes
1-2 green chillies, finely chopped
1 tablespoon oil
1 teaspoon cumin seeds (jeera)
1 tablespoon ginger-garlic paste
1 medium onion, finely chopped
¼ teaspoon sugar
Salt to taste
Two pinches of garam masala powder
Juice of ½ lemon
1 tablespoon fresh cream + for garnishing
Ginger strips for garnishing

Method

1. Put spinach leaves in a microwave proof bowl. Sprinkle some water on top and cook in microwave on high (100%) for 5-6 minutes. Refresh in cold water and squeeze out excess water from the blanched spinach leaves.
2. Grind the blanched spinach leaves into smooth puree alongwith green chillies into puree. Add some water and grind into smooth and semi-thick puree.
3. Mix together oil, cumin seeds, onion and ginger-garlic paste in another microwave proof bowl and cook in microwave on high (100%) for 4 minutes.
4. Add spinach-chilli puree, 3-4 tablespoons water, sugar, salt and garam masala powder, mix and cook in microwave on high (100%) for 4 minutes.
5. Add lemon juice and cottage cheese cubes, mix and microwave on high (100%) for 1 minute.
6. Add 1 tablespoon cream and mix well.
7. Serve hot garnished with some cream and ginger strips.
