PANEER BHUNA MASALAIngredients400 grams cottage cheese (paneer), cut into 1 inch cubes cup grated cottage cheese (paneer) cup yogurtSalt to taste2 tbsps roasted gram flour (besan)1 tsp cumin powder tsp coriander powder tsp black pepper powder tsp garam masala powder1 tsp red chilli powder tsp turmeric powder1 tbsp ginger-garlic paste2-3 tbsps mustard oilGravy2-3 tbsps mustard oil1 tsp cumin seeds2 star anise1 inch cinnamon stick3-4 green cardamoms4-5 cloves6-8 black peppercorns2 large onions, finely chopped1 tbsp ginger-garlic paste2 large tomatoes, finely choppedSalt to taste1 tsp red chilli powder tsp garam masala powder tsp turmeric powder1 tsps coriander powder2-3 green chillies, slit1 tbsp chopped fresh coriander leavesMethod1. Combine together yogurt, salt, roasted gram flour, cumin powder, coriander powder, black pepper powder, garam masala powder, red chilli powder, turmeric powder, and ginger-garlic paste in a large bowl. Add paneer cubes and gently mix till each cube is well coated with the masala. Set aside to marinate for 15-20 minutes. 2. Heat mustard oil in a pan.3. Add the paneer cubes and cook on both sides for 2-3 minutes. Take the pan off the heat.4. To make the gravy, heat mustard oil in a wide pan. Add cumin seeds, star anise, cinnamon stick, green cardamoms, cloves, black peppercorns, and saut till fragrant.5. Add onions, mix and cook till golden brown. Add ginger-garlic paste and mix well. Cook for 1-2 minutes.6. Add tomatoes, mix, add salt, and mix again. Cook till soft and pulpy.7. Add red chilli powder, garam masala powder, turmeric powder, and coriander powder and saut for 1-2 minutes.8. Add 1 cup water, mix and cook for 2-3 minutes. Add grated paneer and mix well. Cook for 1-2 minutes.9. Add the paneer cubes and gently mix till well combined. Add green chillies, and coriander leaves and mix well. Cook for 1-2 minutes.10.
