Deep fried tender paneer kofta in creamy rich tomato based gravy.

PANEER KOFTA IN SPICY TOMATO GRAVY

Ingredients

200 grams cottage cheese (paneer), grated
2 medium potatoes, boiled, peeled and grated
Salt to taste
A pinch of red chilli powder
¼ tsp green cardamom powder
2 tbsps chopped coriander leaves
10-15 cashewnuts, coarsely crushed
2½ tbsps roasted gram flour
1 tbsp corn flour + for coating
Oil for deep frying
Tomato gravy
3 tbsps Tata Sampann Spicy Tomato Chutney
1 cup fresh tomato puree
1 tbsp oil
1 tsp cumin seeds
½ tbsp finely chopped garlic
2 medium onions, pureed
Salt to taste
¼ tsp turmeric powder
½ tsp red chilli powder
1 cup fresh tomato puree
A pinch of black pepper powder
Fresh cream for drizzling
Chopped fresh coriander leaves for garnish

Method

1. For the koftas, take paneer in a large bowl, add potatoes, salt, red chilli powder, green cardamom powder, coriander, cashew nuts, roasted gram flour and corn flour and mix till a dough is formed.
2. Heat sufficient oil in a kadai.
3. Spread corn flour on a plate and take small portions of the dough and shape them into balls and roll on the corn flour and dust off the excess flour.
4. Drop the koftas into the hot oil. Deep fry till golden brown and crisp. Drain on an absorbent paper.
5. For the gravy, heat oil in a non-stick wok. Add cumin seeds and let them change colour.
6. Add garlic and 1 tbsp water and mix well.. Add onion puree and mix well. Add a pinch of salt and mix well, cook till the onion turns light golden brown.
7. Add salt, turmeric powder, red chilli powder, and mix well. Cook for a minute.
8. Add fresh tomato puree and mix well. Cook for 3-5 minutes or till the oil separates.
9. Add ¾ cup water and mix well, cover and cook for 5-7 minutes. Add Tata Sampann Spicy Tomato Chutney and mix well.
10. Add black pepper powder and mix well. Take the pan off the heat.
11. Add a portion of the gravy on a serving plate and place the prepared koftas on top and drizzle fresh cream.
12. Garnish with coriander leaves and serve hot.
